Recipe Ingredients for Spicy Roasted Veggie Pasta

20 oz Three Cheese Tortellini
4 small Squash, Summer, Zucchini, Includes Skin
2 cups eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1/2 cup Olive Oil
10 tbsp chopped Shallots
1/4 tsp The Original Pizza Peppers Crushed Chile Flakes
2 cups Mushrooms
1/2 tsp Salt, Table
1/2 tsp Pepper, Black
2 1/2 oz Romano Cheese
12 clove Garlic
1/2 cup Basil

Recipe Directions for Spicy Roasted Veggie Pasta

  1. Heat oven to 400 degrees.

  2. Cut zucchini, eggplant and shallots in 1/4 inch pieces, peel and halve the garlic cloves and toss with most of the olive oil and the red pepper flakes. Spread the veggies out on two baking sheets, sprinkle with salt and pepper and roast for 10 minutes.

  3. Cut the mushrooms, add a little olive oil, salt and pepper and add to the other veggies, roasting for another 15 minutes.

  4. Meanwhile, cook the pasta. Save 1/4 cup of the cooking liquid before you drain it.

  5. Chop the basil finely, then combine the pasta, veggies, cooking liquid, romano cheese and basil over very low heat until all combined.

  6. Serve immediately!
