This is a favorite side dish during the winter months. Roasting accentuates the vegetables' flavor and brings out their natural sweetness. You can vary the vegetables based on what's available in your grocery store or farmer's market. This is a very versatile dish: you can use a few of the vegetables in larger quantities or substitute other vegetables such as eggplant and tomatoes. You can also try different seasonings.

Recipe Ingredients for Spicy Roasted Vegetables

1/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
10 ounces pearl onions
1 teaspoon dried oregano
2 garlic cloves, minced
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons molasses (not blackstrap)
2 medium carrots, halved lengthwise
1 large red bell pepper, cut in 1/4‐inch strips
1 large yellow bell pepper, cut in 1/4‐inch strips
1 medium zucchini, sliced 1/4‐inch thick
1 medium sweet potato, peeled and cut in 1/2‐inch cubes
1 fennel bulb

Recipe Directions for Spicy Roasted Vegetables

  1. Combine all the ingredients in a large bowl and toss thoroughly. Let stand 30 minutes. Toss again.

  2. Place a rack in the middle of the oven. Preheat the oven to 400F. Drain the vegetables and reserve the marinade. Arrange the vegetables on a 15 x 10‐inch rimmed baking sheet that has been lined with foil.

  3. Roast the vegetables, uncovered, 30 to 45 minutes, stirring occasionally. Transfer the vegetables to a serving platter. Heat the reserved marinade to serving temperature and pour over the vegetables. Toss lightly and serve hot.
