This soup uses fat-free half & half to provide a creamy texture to the puree.

Recipe Ingredients for Spicy Red Pepper & Tomato Soup

1 serving Fat-Free Half & Half Land O Lakes 12
10 red bell peppers
4 tomatoes, raw
29 oz. canned whole tomatoes, no salt added
2 onions
6 cloves garlic
1/3 cup fresh parsley, finely chopped
3 tsp dried basil leaves
1 tbsp pepper
1 tsp cayenne pepper
1/4 tsp dried red pepper flakes
3/4 tsp salt

Recipe Directions for Spicy Red Pepper & Tomato Soup

  1. Place red peppers under the broiler, for about 5 minutes per side, until peppers have black spots and the skins are beginning to wrinkle.

  2. Remove peppers from the broiler and place in a brown paper bag until cool.

  3. Cut peppers in half and remove stems, white membranes, and seeds. Slide skin off the pepper.

  4. Put oil in soup pot; chop onions and garlic and saute them in the oil.until softened.

  5. Add tomatoes, chopped raw tomatoes, herbs and spices to skillet. Stir together and heat until the mixture is gently boiling. Add peppers to the mixture. Cook for about 10-12 minutes. Remove from heat, and place mixture in a blender--it will take more than one blender-full to complete. Use the "blend" or "pulse" setting until the mixture is pureed.

  6. Pour the mixture back into the pan. Add 1.5 cups of fat-free half and half and heat....don't boil. Adjust seasonings to taste. I tried to do it without salt, but it needed some salt. I used sea salt.
