Spicy Red Kidney Beans with aromatic spices - used with raw beans that cook in spices and chicken stock.

Recipe Ingredients for Spicy Red Kidney Beans

4 cups of red kidney beans
2 bell peppers
6 cups of chicken stock
2 cups of red onions
4 tablespoons of garlic
4 oz of turkey ham
2 tablespoons of liquid smoke
1 cup of fresh cilantro
1 tablespoon of chili powder
1 tablespoon of cumin
2 tablespoons of canola oil

Recipe Directions for Spicy Red Kidney Beans

  1. Soak raw beans overnight or for at least 8 hours.

  2. Heat a heavy pan with oil and add all vegetables except for cilantro and spices. Stir at medium heat until all vegetables are slightly done (about 7 minutes).

  3. Chop lean turkey ham into 1 inch pieces and add to the vegetables and quickly stir for 5 minutes. Add half of the cilantro into pot and then add cumin, chili powder, liquid smoke and beans. Stir for 2 minutes.

  4. Add chicken stock and 1 cup of water if needed. Cook the raw beans with all of the ingredients at low temperature for 2 hours or until beans are tender.
