This is my Texas- Southern fusion of a Cajun classic.

Recipe Ingredients for Spicy Red Beans

1 cup red beans
1 cup kidney beans
1 tsp. kosher salt
1 cup bell pepper, finely diced
1 cup Red bell pepper, diced
1 cup chopped onion
1/4 cup chopped celery( usually 1 large stalk)
7 oz. Adobo sauce
1/2 tsp. kosher salt
1 tsp. granulated garlic

Recipe Directions for Spicy Red Beans

  2. Rinse beans in clean cold water. Place beans in 4 qt. pot. Cover with clean cold water. sprinkle in 1 teaspoon salt & bay leaves. Place pot over high heat and bring to a boil. Keep beans at a rolling boil for 40 minutes. Then remove from heat. Drain. Rinse. Discard bay leaves.

  3. At this point you can either put beans in a slow cooker or return to the pot on the cooking stove. Now cover the beans with the chili peppers, onion,celery,chipotle & adobe sauce, salt, garlic, and water. Cook on low heat for hours until beans are tender.
