Super spicy salad to be put on bread or in a wrap.

Recipe Ingredients for Spicy Quinoa Salad

1 cup quinoa
1 cup chicken stock
1 cup water
1 cup chopped tomatos
1/4 cup red shallot
4 servings kosher pickle spears
2 servings Adobo Sauce Chipotle Peppers
2 tablespoons mayonaise
3 tablespoons deli mustard
2 tablespoons minced garlic
2 cups chopped spinach

Recipe Directions for Spicy Quinoa Salad

  1. Prepare Quinoa in a pot with water and chicken broth

  2. Chill Quinoa once its finished cooking and while you prepare the other ingredients.

  3. Mince garlic and chipotle peppers then combine with mustard and mayo in bowl.

  4. Chop tomatoes into bite sized pieces as well as the spinach and onions and pickles.

  5. In a bowl combine all the items and mix well.
