Recipe Ingredients for Spicy Pumpkin Soup with Chicken

4 tbsp butter
1 teaspoon poultry seasoning
2 medium yellow onions, chopped
2 teaspoons minced garlic
1/4 teaspoon crushed red pepper
4 teaspoons curry powder
1 teaspoon garam masala
1/2 teaspoon ground coriander
1 pinch ground cayenne pepper (optional)
45 oz canned pumpkin
1 cup yellow squash, chopped
5 cups of chicken broth
1 tsp salt
1 cup of milk
2 cups chopped cooked chicken
2 cups carrots, chopped
1 cup squash
2 cups celery, chopped

Recipe Directions for Spicy Pumpkin Soup with Chicken

  1. Melt butter in a pan over medium heat. Add onions, carrots, celery, and garlic. Cook, stirring often, until softened. Add spices and stir for a minute more.

  2. Add pumpkin and 5 cups of chicken broth. Blend well. Bring to a boil and reduce heat, simmering until carrots are tender.

  3. With the soup on low heat, slowly add milk while stirring to incorporate. You can add 1/2 cup evaporated milk or heavy cream if you would like. Adjust seasonings to taste. If a little too spicy, add more cream to cool it down. You might want to add a teaspoon of salt.
