a chowder-like soup that's creamy and delicious and (almost) guilt free. tastes like fall!

Recipe Ingredients for Spicy Pumpkin Sausage Soup

2 cups onion, diced
1/2 tbs. olive oil
7 servings smoked turkey sausage
1 cup frozen corn
2 1/2 cups sweet potato, cubed, raw
4 cups chicken broth
4 cups pumpkin, cooked and mashed
1/2 cup water
1 tsp. pepper

Recipe Directions for Spicy Pumpkin Sausage Soup

  1. bake pumpkin in 350 degree oven until soft. scoop out 4 cups.

  2. heat oil in soup pot and cook onions until soft.

  3. cut turkey sausage into cubes and add to onion. i use oscar meyer smoked turkey sausage (630 calories in a 14 oz. pack) cook until browned.

  4. add corn and sweet potato and cook while preparing broth.

  5. put 2 cups pumpkin and 2 cups chicken broth in blender. blend until very smooth. add to pot. do the same with remaining pumpkin and broth.

  6. add water to desired thickness (i used about 1/2 cup)

  7. add pepper and salt to taste. 1 tsp will make very spicy soup!

  8. cook until sweet potato cubes are tender.

  9. enjoy! this soup is a whole meal in a bowl!
