Recipe Ingredients for spicy potatoes with cottage cheese

6 medium potatoes
12 oz low fat cottage cheese
1 tsp cumin
2 tsp tomato paste
1 tsp coriander
1 tsp red pepper flakes
1 tbsp olive oil
1/2 tsp mustard seeds
3 tbsp water
2 tomatoes

Recipe Directions for spicy potatoes with cottage cheese

  1. Oven - 350. Scrub potatoes. Prick with a fork, wrap in foil and bake 1 hour.

  2. Place cottage cheese in heatproof bowl. Place tomato paste, cumin, coriander, red pepper flakes, SP in another bowl.

  3. Heat EVOO and saute onion and mustard seeds for 1 min. Add tomato paste ixture and water to saucepan. Mix well. Cook 1 min. Pour into cottage cheese. Mix well.

  4. When potatoes are cook, unwrap and ct open along the top. Divide spicy cottage cheese equally among potaotes.

  5. Garnish wtih tomato.
