Recipe Ingredients for Spicy pork tenderloin/Spinach salad

1/2 tsp cinnamon
1/2 tsp cumin
1/2 tsp chili powder
6 oz. fresh pork tenderloin
6 oz. fresh spinach
2 tbsp Splenda Brown sugar blend
1 tsp Tabasco sauce
2 cloves garlic
1/2 green bell pepper
1/2 yellow bell pepper
1/4 avocado
1 orange
4 T Lite Raspberry Walnut Vinaigrette

Recipe Directions for Spicy pork tenderloin/Spinach salad

Mix cinnamon, chili powder, and cumin together. Rub the pork tenderloin with the spices until well coated. Slice the pork tenderloin into 1/2 inch slices. Heat olive oil in skillet. Brown the tenderloin slices on each side, cooking over medium hot heat for 2 minutes each side. Transfer the tenderloin to a baking dish. Chop clove garlic finely. Stir into brown sugar. Mix Tabasco sauce into the brown sugar. Press the brown sugar mixture on the top of the pork slices in the dish. Bake at 350 degrees for about 20 minutes or until tender. Put spinach onto two plates. Arrange chopped peppers, orange slices, and avocado on the spinach. When pork is cooked, slice each pork slice into 1/4 inch strips and arrange over the spinach and veggies. Serve with Raspberry vinaigrette or balsamic vinaigrette..
