This spicy wine filled with flavor is excellent on top of roast duck or chicken.

Recipe Ingredients for Spicy Pear Sauce with Red Wine

2 tablespoons olive oil
1 large red onion, finely chopped
3/4 cup dry red wine
4 cups chicken stock
1 hot pepper
1 tsp. cinnamon
1 tsp. fennel seed
2 pears, peeled, seeded and halved
2 tbsp. Promise spread
1 tsp salt
1 tsp black pepper

Recipe Directions for Spicy Pear Sauce with Red Wine

  1. Heat oil in a large saucepan over medium-high heat.

  2. Add the onion and cook until soft.

  3. Add the wine and cook until reduced.

  4. Add the stock, chiles, cinnamon, fennel, and pears, and cook until reduced by 1/2.

  5. Strain the sauce into a clean saucepan and cook to a sauce consistency, and can coat the back of a spoon thickly.

  6. Remove from the heat and whisk in the butter and season with salt and pepper, to taste.

  7. Sauce can be gently re-heated, but cannot boil, or the sauce will break.
