I know it's weird that this soup doesn't have onions or garlic - i was hesitant myself, but gave it a shot. I also added hot sauce after; it wasn't spicy enough!!

Recipe Ingredients for Spicy Peanut Pumpkin soup

2 tsp coriander
1/2 tsp chili powder
1 tsp olive oil
2 carrots
1 cup unsalted peanuts
2 cups Pumpkin
1 cup frozen spinach
2 tsp marmite
2 stalks celery

Recipe Directions for Spicy Peanut Pumpkin soup

Sweat spices, vegetables and peanuts for a good ten minutes. Drizzle marmite over (i have squirt bottle version) and then add 6 cups water. Add puree pumpkin - mine had been frozen. Bring to a simmer over medium heat and allow to cook for 40 minutes, or until carrots are soft. At this point, strain out vegetables into blender/food processor (too much liquid in food processor is never good) and puree. Peanuts may remain in small pieces. Add puree back to broth, and add any remaining spices, as well as frozen spinach, you desire to bring the taste to your liking. Enjoy!!
