Recipe Ingredients for Spicy Peanut Noodles

2 tbsp Peanut Butter, Smooth Style
0.5 cup Rice Noodles, Cooked
0.25 cup, chopped Carrots
0.25 cup, chopped Broccoli, Cooked
0.25 cup, chopped Peas, Edible-podded (sugar snap peas)
1.5 1tsp Oil, Sesame
1 tbsp Soy Sauce
0.13 package Extra Firm
0.5 tsp Sriracha Chili Sauce
1 wedge yields Lime Juice
0.5 clove Garlic

Recipe Directions for Spicy Peanut Noodles

  1. Boil lightly salted water. Add chopped carrots, wait a minute, add noodles, wait a minute, add broccoli. Cook until noodles are just about tender and add peas. Drain noodles and veggies and set aside.

  2. Tear up tofu into small pieces and brown in pan with a bit of sesame oil, sprinkling with half the soya sauce near the end. Set tofu aside.

  3. Finely chop garlic and cook until fragrant in pan.

  4. Turn pan to low and add peanut butter, remaining oil, lime, sriracha and soya sauce. Stir until smooth.

  5. Add noodles, veggies and tofu back to pan and toss together until combined.
