Recipe Ingredients for Spicy Peanut-Hoisin Noodles with Tofu and Broccoli

16 oz linguine
1/4 c creamy peanut butter
2 tbsp hoisin sauce
2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sriracha sauce
1 tbsp agave nectar
1 tsp toasted sesame oil
1 c vegetable broth
1 tbsp canola oil
1 lb extra-firm tofu, diced
6 scallions, minced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
5 c broccoli florets
3 carrots, thinly sliced

Recipe Directions for Spicy Peanut-Hoisin Noodles with Tofu and Broccoli

  1. Cook the linguine in a large pot of boiling salted water until just tender, about 10 minutes. While the pasta is cooking, combine the peanut butter, hoisin sauce, soy sauce, rice vinegar, sriracha, agave nectar, and sesame oil in a small saucepan, stirring to blend. Stir in the broth to keep the sauce smooth. Keep warm over low heat.

  2. Heat the oil in a large skillet over medium-high heat. Add the tofu and cook until golden brown all over, 8-10 minutes. Season to taste with salt and pepper. Add the scallions, garlic, and ginger, and cook until softened, about 1 minute.

  3. About 3 minutes before the pasta is cooked, add the broccoli and carrot to the pasta water. Drain the cooked pasta and vegetables and return them to the pot. Stir in the tofu and the reserved sauce and toss gently to combine. Serve hot sprinkled with chopped peanuts (opt.).
