Recipe Ingredients for Spicy Peanut Chicken

1 cup brown rice, prepared according to package
3 tbsp canola oil
1 lbs boneless chicken breast, diced into bite-sized pieces
1 red bell pepper, diced into 1/2" pieces
2 tsp grated ginger
4 cloves garlic, finely chopped
1/4 cup creamy peanut butter, natural reduced sugar
1/4 cup soy sauce, Tamari
3/4 cup fat-free chicken broth
1 tbsp chili paste
2 tsp toasted sesame oil
8 oz sliced water chestnuts, drained
6 green onions, chopped on angle into 1" pieces
1/2 cup unsalted dry roasted peanuts

Recipe Directions for Spicy Peanut Chicken

  1. Start brown rice and 10 minutes before it is done, begin your stir fry. Cut up all vegetables in advance before you start the stir fry.

  2. Heat a Tbsp of oil over high heat in a large skillet. Add chicken and stir fry for 2-3 minutes.

  3. Add peppers and stir fry 2 minutes more.

  4. Remove chicken and peppers to a plate & add 2 Tbsp more oil to the skillet.

  5. Add ginger & garlic & stir fry 15 seconds, then add in peanut butter, soy, broth, chili paste, & sesame oil and stir to combine into sauce.

  6. Add chestnuts & green onions and toss 1 minute.

  7. Add chicken & peppers back into skillet with peanuts and turn to coat in sauce.

  8. Serve over rice.
