Spicy Pasta Pie from "The Dieter's Cookbook" by Better Homes and Gardens, p. 288

Recipe Ingredients for Spicy Pasta Pie

4 oz of dried vermicelli, broken
1 egg white, beaten
1 cup shredded mozzarella cheese
1 pound turkey breakfast sausage
1/2 cup chopped onion
1 clove garlic, minced
1 cup of diced tomatoes, undrainded (a 7.5 oz can)
1/3 cup (1/2 of a 6oz can) of tomato paste
1 teaspoon dried Italian seasonings
1/8 teaspoon crushed red pepper
2 tablespoons parmesan cheese

Recipe Directions for Spicy Pasta Pie

  1. Cook vermicelli according to package directions. Drain well.

  2. Toss with egg white.

  3. Spray a 9 inch pie plate

  4. Press vermicelli mixture into bottom of prepared dish. Sprinkle with mozzarella cheese. Set aside.

  5. Meanwhile, in a large skillet cook the turkey sausage, mushrooms, onion, and garlic until sausage is no longer pink and onion is tender. Drain off fat.

  6. Stir in the undrained tomatoes, tomato paste, Italian seasoning and crushed red pepper.

  7. Pour sausage mixture over cheese layer.

  8. Cover dish loosely with foil. Bake in a 350 degree oven for 25 to 30 minutes or until heated through. Sprinkle with Parmesan cheese. Let stand 10 minutes. Cut into four wedges to serve.
