An asian noodle salad with peanut dressing.

Recipe Ingredients for Spicy Noodle Salad

9 oz rice noodles
5 tsp canola oil
2 oz snow peas, julienne
1 small carrot, shredded
3 tbsp green onions, minced
2 tbsp low sodium soy sauce
2 tbsp creamy peanut butter
2 tbsp white vinegar
1 tbsp sugar
1 tsp ginger, minced
1/4 tsp cayenne pepper

Recipe Directions for Spicy Noodle Salad

  1. Cook rice noodles according to package directions. Rinse with cold water; drain thoroughly. Place noodles in large bowl; toss with oil.

  2. Pour boiling water over snow peas in a bowl; let stand 30 seconds. Drain; cool under cold water and drain thoroughly.

  3. Add snow peas, carrot and green onions to noodles. Cover and refrigerate until chilled.

  4. Meanwhile, prepare Peanut Dressing. Gradually blend soy sauce into peanut butter in a small bowl. Stir in white vinegar, oil, sugar, ginger and cayenne pepper until well blended.

  5. Pour dressing over noodle mixture; toss to coat all ingredients well. Serve immediately.
