A spicy, healthy stew for any time. Can be eaten by itself, with eggs, or in a burrito (without broth).

Recipe Ingredients for Spicy Mushroom Stew

2 tbsp olive oil
1 tsp cumin
1 tsp coriander
1 onion, diced
2 tsp garlic powder
2 lbs mushrooms, sliced
1 lb grape tomatoes, diced
2 Jalapeno Peppers, diced
2 tbsp water
1 Salt and Pepper to taste

Recipe Directions for Spicy Mushroom Stew

Heat olive oil in a large skillet. Toss in onion, let cook until it begins to brown. Add mushrooms and peppers. Add spices as it cooks. Add tomatoes. This can be cooked on high to start, but as everything begins to cook down, let the stew simmer. This is a basic stew, so taste it to see when it's done.
