Recipe Ingredients for Spicy mexican style zucchini casserole

3 lbs zucchini
1 c onion
1 tsp garlic salt
1 tsp paprika
1 tsp oregano
1 tsp cayenne pepper
1 c cooked long grain brown rice
1 c pinto beans
2 1/2 c salsa
2 1/2 c cheddar cheese, shredded

Recipe Directions for Spicy mexican style zucchini casserole

Saute zucchini and onions until tender, about 10 minutes. Season with garlic salt, paprika, oregano and pepper, and continue cooking until fragrant. mix in the rice, beans, and salsa and cook just until heated through. mix in 1 c of cheddar cheese until well blended. Transfer to 9x13 baking dish and top with remaining cheese. Cover dish and bake at 350 for 20 minutes or until cheese is melted and bubbly.
