This easy 30 minute meal is a great addition to the weeknight menu! You can make it a bit more spicy by adding jalapenos. My family loves it! And, would never guess that it's a "healthy" choice!

Recipe Ingredients for Spicy Mexican Skillet Chicken

1 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/4 lb Chicken Breasts (approx 4 breasts)
1 tablespoon vegetable oil
2 cups Black Beans, drained, rinsed (approx 1 15oz can)
1 1/2 cups whole kernel corn (approx 1 can, drained)
2 cup salsa
2 tbs low fat Cheddar

Recipe Directions for Spicy Mexican Skillet Chicken

  1. In small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.

  2. In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170F).

  3. Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot.
