From Betty Crocker's Healthy New Choices page 152 (slightly modified, subst. jalapeno for chili pepper, doubled salsa, added cheese)

Recipe Ingredients for Spicy Mexican Skillet Chicken

228 g chicken breasts
1 tablespoon canola oil
1/2 cup corn
1 cup black beans
1 cup salsa
0.03 cup jalepeno pepper
2 tablespoon shredded low fat cheddar cheese
1 tablespoon chili powder
1/4 teaspoon salt
1/2 teaspoon pepper

Recipe Directions for Spicy Mexican Skillet Chicken

  1. Mix salt, pepper, and chilli powder in a bowl.

  2. Toss chicken breasts to cover in spice mixture.

  3. Heat oil in skillet medium high heat.

  4. Brown Chicken breast 4 minutes each side.

  5. Add remaining ingredients and cover 5-7 minutes until chicken is done. Top breast with cheese and allow to melt. Serve breast with beans & corn mixture on the side.
