Recipe Ingredients for Spicy Mexican Chicken Soup

72 1/2 oz (5 cans) low sodium chicken broth
1 c. dry black beans
2 small onions
1/2 large red bell pepper
1 large green bell pepper
20 g. jalapeno pepper
3 tbsp. garlic
1 c. frozen corn
3 c. frozen spinach
14 oz. diced tomatoes
1 tsp. olive oil
3 breast chicken, boneless, skinless
4 tbsp cumin
4 tbsp chili powder

Recipe Directions for Spicy Mexican Chicken Soup

  1. Rehydrate black beans--I like to put them into a rice cooker to rehydrate/cook at the same time with a 3-1 water-bean ratio.

  2. Heat the olive oil in large heavy pot over medium.

  3. Slice green and red peppers and onions into long, thin strips. Mince garlic and jalapenos.

  4. Sautee peppers, onions, and garlic until soft, adding a little bit of chicken broth to keep moist and add flavor.

  5. Place whole chicken breasts on top of veggies and sprinkle with 1 tbsp. each cumin and chili powder. Cover with chicken broth and let simmer until chicken is cooked through.

  6. Remove chicken and cut into small, bite size chunks. In the meantime, add tomtatoes, corn, spinach, broth, and spices to pot and bring to boil.

  7. Add cooked beans and boil for a few more minutes. Add chicken and bring down to simmer.

  8. Serve topped with sliced green onions, cilantro, sour cream, and cheese (optional).
