A spicy mediterranean dish that gets an "A" grade!

Recipe Ingredients for Spicy Mediterranean Fish

2 onions, sliced
2 large ripe tomatoes, chopped
2 cloves garlic, crushed
2 tbs. white wine
1 tsp. chili powder
2 tbs. fresh basil, chopped
6 black olives (optional)
24 oz haddock fillets (4 fillets, approx. 6 oz ea)

Recipe Directions for Spicy Mediterranean Fish

  1. Combine first 7 ingredients in a bowl and set aside.

  2. Heat oil in a heavy nonstick skillet over medium high heat.

  3. Sauté fish 3 minutes or until golden.

  4. Turn fish and add reserved sauce to skillet.

  5. Simmer 3 minutes or until fish flakes easily with a fork. Serve with sauce.
