This is a homemade meatloaf that can be substituted with any type of low fat ground meat. Add red curry paste for the kick! Any curry paste will do actually. Enjoy!

Recipe Ingredients for Spicy Meatloaf

1 lb of ground turkey breast
1/4 cup liquid egg substitute
1 onion
4 tbsp bread crumbs
4 tbsp of cilantro
3 garlic cloves
1/2 cup of black beans
2 cups of grated parmesan
2 tbsp of ketchup
1 red bell pepper
1 yellow bell pepper
14 oz of crushed tomatoes
2 tbsp red curry paste
1 tbsp of canola oil

Recipe Directions for Spicy Meatloaf

  1. Preheat oven to 350 degrees F. Coat a roasting pan with oil.

  2. In a medium bowl add curry paste, ground beef or poultry, egg substitute, onion, garlic, bread crumbs, cilantro, black beans, cheese, Worcestershire sauce and salt. Stir ingredients together until blended well.

  3. Mold mixture into pan. Place pan in oven and cover with one tablespoon of ketchup.

  4. Bake for one hour at 350 Remove from oven and allow five minutes for cooling time before serving.
