Vegan; healthy; serving is about 1/2 cup. I added 2 tsp salt and 1/2 tsp black pepper.

Recipe Ingredients for Spicy Lima Bean Soup

6 cups water
16 oz Salsa
16 oz Large Lima Beans
1 Salt and pepper to taste

Recipe Directions for Spicy Lima Bean Soup

  1. Wash beans very well. Soak overnight in 8 cups of cold water.

  2. Drain beans and rinse; add 6 cups of hot water. Simmer gently with lid tilted for 90 minutes. Add the jar of salsa & simmer for another 30 minutes.
