Recipe Ingredients for Spicy lentil curry

1 tbsp olive oil
1 red onion, medium
2 garlic cloves
1 tsp cumin
1/2 tsp turmeric
1 tsp curry powder
1/2 tsp ground ginger
5 1/4 oz. lentils
2 medium carrots
2 1/2 oz green beans
2 1/2 oz. frozen peas

Recipe Directions for Spicy lentil curry

  1. Heat oil in a large sauce pan and cook onion and garlic until softened but not colored.

  2. Add cumin, turmeric and ginger and cook for two minutes.

  3. Stir in lentils carrots. Add 3 3/4 c. cold water. Boil 12-15 minutes

  4. Add the beans and peas and cook 5 more minutes, stirring occasionally until lentils are soft and vegetables are tender
