This makes a hearty, low calorie, high protein meal. Fast and tasty! Leave out the chicken for a zesty side dish.

Recipe Ingredients for Spicy Italian Quinoa

1 cup quinoa
2 cups water
8 oz tomato, diced (from a can)
8 oz chicken breast, shredded (from a can, drained)
1 onion
3 cloves garlic
1 tsp salt
2 tbsp pepper
1 tsp cayenne pepper
1 tbsp oregano
2 tbsp olive oil
1/4 cup white wine
2 baby carrots, shredded

Recipe Directions for Spicy Italian Quinoa

  1. Follow preparation instructions on box of quinoa

  2. Dice the onion and sautee with olive oil for 2 minutes

  3. Add carrots, diced garlic, salt, pepper, oregano and cayenne (I also added red pepper flakes - we like it spicy!), stir well, add more oil if the mixture looks dry to prevent burning

  4. Reduce heat to medium low and cover until onions are transparent (about 5 mins)

  5. Deglaze the pan with white wine, then add 1 can of tomatoes (we used Hunt's diced italian style). Increase heat to medium, and add chicken.

  6. Stir chicken mixture into finished quinoa and enjoy! This would also be great with peppers, zucchini, spinach - all sorts of veggies.
