Good as a vegetarian entree with brown rice or as an Asian-inspired side dish.

Recipe Ingredients for Spicy Greens

2 T natural peanut butter
1/3 cup vegetable broth, reduced-sodium
1 t olive oil
1 t brown sugar
1/4 t salt
1/4 t chili flakes
6 oz. fresh spinach
6 oz. fresh arugula

Recipe Directions for Spicy Greens

  1. Mix first 6 ingredients in bottom of large pot. Cook over medium until smooth and just starting to bubble, stirring constantly.

  2. Add spinach and arugula and toss with tongs until coated with sauce and just cooked, 45-60 seconds.

  3. Serve immediately. Good with brown rice and chili sauce!
