This soup is so flavorful and guilt free you wont believe it. It only has between 150-200 calories per serving with 6-8 servings a pot.

Recipe Ingredients for Spicy green chili soup

16 oz Fresh Boneless Skinless Chicken Breasts
1 tbsp Olive Oil
1 cup, chopped Onions
1 medium raw Bell Pepper Green
7 oz Green Chiles
3 clove Garlic
1 cup Cilantro
1 fruit (2" dia) Limes
15 oz Beans, Pinto, Mature Seeds, Canned
32 oz Chicken Broth
1 1/2 tbsp Cumin
2 tsp Oregano

Recipe Directions for Spicy green chili soup

  1. Boil or cook chicken to liking before starting soup.

  2. Put oil in the bottom of a pot and add onion and bell pepper. Cook over medium heat until bell pepper is soft and onion is translucent.

  3. Add garlic and continue to cook until fragrant.

  4. Add green chilies, half the cilantro, the juice and zest of the lime, the cooked chicken, and the spices; stir for a second or two.

  5. Add the chicken broth and let simmer.

  6. You can strain the can of beans and add them whole, or you can pure the beans into a mush and add to soup (this will act as a thickener in the soup, creating a stew like consistency)

  7. Whichever way you choose, add the beans and continue to cook on medium low heat another 20-30 minutes.

  8. Enjoy!

  9. (try serving over rice!)

  10. NOTE: the soup gets better the longer it stands (its even better as leftovers!!)
