Recipe Ingredients for Spicy Green Beans with Feta & Black Olives

2 teaspoons olive oil
1/2 pound green beans, cut in 1" pieces
1 cup onions, chopped
1 cup red pepper, sliced
1/2 teaspoon red chili flakes
1/2 cup artichoke hearts, canned in water
1/4 cup water or broth
1 teaspoon cornstarch, dissolved in water
1 tablespoon lemon juice
1/3 cup reduced fat feta cheese
2 tablespoons kalamata olives

Recipe Directions for Spicy Green Beans with Feta & Black Olives

  1. Heat oil in saute pan; add green beans, onion, red pepper and red chili flakes. Saute for 3 - 5 minutes.

  2. Add artichokes, cornstarch and water. Bring to simmer until thickened Stir in lemon juice, feta and olives. Adjust for seasoning and serve.
