Fast, easy, spicy. An adaptation from the Spicy Garlic Noodle Toss in How It All Vegan!

Recipe Ingredients for Spicy Garlic Rice & Veggie Toss

6 cloves garlic
2 tbsp olive oil
1/2 cup water
1 1/2 tbsp soy sauce
1 tsp paprika
1/2 tsp dried basil
1/2 tsp dried red peppers
1/2 tsp salt
1/4 tsp cayenne pepper
2 cups rice, cooked
2 cups mixed vegetables
8 oz tofu, firm, cubed
1 cup edamame, shelled

Recipe Directions for Spicy Garlic Rice & Veggie Toss

  1. If rice is not already cooked, then bring 1 cup of rice to boil in 2 cups of water. Reduce heat and simmer 10-20 minutes until rice is done. Remove from heat and set aside.

  2. Steam mixed vegetables, tofu, and edamame in a vegetable steamer.

  3. Combine garlic and 1/2 of oil in a small pan. Sautee garlic for a few minutes. Then add the rest of the oil, water, and spices. Simmer for several minutes on reduced heat until the veges are done.

  4. In a large bowl (or one of the pots you cooked either the rice or steamed the veges in), combine the rice, vege/tofu mix, and sauce. Toss until well combined and serve right away.
