Recipe Ingredients for Spicy Fried Mushrooms

1 tbsp peanut oil
1 tsp garlic, crushed
1 tsp ginger, grated
1 tbsp spring onion, finely chopped
1 lb mushrooms, small whole button
2 tsp sweet chili sauce
1 tbsp cooking sherry
1/2 tsp freshly ground pepper
1 chicken stock cube
2 tbsp water
1/2 tsp sesame oil

Recipe Directions for Spicy Fried Mushrooms

  1. Heat a wok or large frying pan until very hot. Add the oil and when hot and slightly smoking, add the garlic, ginger and spring onions and stir-fry for about 20 seconds. Add mushrooms and stir-fry for about 30 seconds.

  2. Add the rest of the ingredients except the sesame oil.

  3. Continue to fry for about 5 minutes or until mushrooms are cooked through and have absorbed all the spices and seasonings. Just before serving, add the sesame oil and give the mixture a couple of quick stirs.

  4. Serve at once
