Juicy and succulent marinated rump steak juxtaposed wonderfully on a bed of cold nutty noodles.

Recipe Ingredients for Spicy Firecracker Beef with Rice Noodle Salad

16 ounce rump steaks, sliced into thin strips across the grain
1 tsp soy sauce
2 tbsp rice vinegar
2 tbsp of chili sauce
1/2 tsp of Chinese 5 spice
1/2 tsp of ginger puree or grated ginger
3 cloves of garlic, roughly chopped
1 black pepper, to taste
1 tbsp of vegetable oil
8 oz rice noodles, rinsed and drained well
2 tsp. fish sauce
2 tbsp rice vinegar
1/3 cup shredded carrot
1/4 cup chopped peanuts
2 tbsp rice vinegar

Recipe Directions for Spicy Firecracker Beef with Rice Noodle Salad

  1. Marinate the steak in the soy, rice vinegar, chilli sauce, 5 spice, ginger, garlic, pepper and oil and refrigerate for 1 hour.

  2. Cook the noodles for 4 minutes and drain well. Add 2 tsp of fish sauce, 2 tbsp of rice vinegar, 1/3 cup of shredded carrot.

  3. Mix it up and refrigerate until needed.

  4. In a very hot preheated dry pan, sear the beef slices for 5 minutes per side. Remove and let cool.

  5. To finish the salad, add 2 more tbsp of rice vinegar, the chopped peanuts, toss together and the salad is ready as a base for the firecracker beef.

  6. To finish the beef. Preheat the pan very well and sear those beef slices for just a minute or two, just to caramelize the outside and the inside is still going to be really juicy and delicious.

  7. Add the hot slices back into the marinade, then top the cold noodle salad with the beef and a little sprinkle of peanuts.
