Recipe Ingredients for Spicy Eggplant and Tomato

2 tbs extra virgin olive oil
1 large eggplant
1 large onion
4 small tomatos
1 large red pepper
1 tsp crushed red pepper
1 tsp pepper
1/2 teaspoon salt

Recipe Directions for Spicy Eggplant and Tomato

  1. Heat oil in large pan on stove.

  2. Sliver and saute onion and pepper

  3. Slice egg plant 1/2 inch thick and cube; add to onions and peppers.

  4. Chop tomatos and add; reduce heat.

  5. Add red pepper, pepper, salt and seasonings of choice.
