This dip is perfect for anyone who craves something low-cal/fat. It's good with plenty of zing!

Recipe Ingredients for Spicy Eggplant & Red Pepper Dip

1 lb eggplant, unpeeled
300 g red bell peppers, cored and seeded
2 tbsp olive oil
1 garlic clove, crushed
1 teaspoon dried crushed red pepper flakes (1/2 teaspoon for wimps)
2 tbsp lemon juice
1/4 teaspoon salt

Recipe Directions for Spicy Eggplant & Red Pepper Dip

  1. Preheat oven to 400 degrees.

  2. Wash eggplant and peppers.Place vegetables on baking sheet (preferably a nonstick baking sheet) and bake for 40 minutes. Turn the veggies over after 20 min.

  3. Place the peppers in a metal bowl and cover with plastic wrap for about 20 min.

  4. When the vegetables are cool enough to handle, remove the stems and cut the eggplant in half, peel the skin from the peppers and remove the seeds.

  5. Place the roasted vegetables into a food processor or blender along with the oil, pepper flakes, garlic lemon juice and salt.

  6. Puree.

  7. Pour into a suace pan and simmer for about half an hour to reduce the liquid. Serves 4 to 8.
