Recipe Ingredients for Spicy Eggplant and Pea Curry with Chicken

2 1/2 tablespoons vegetable oil, divided
2 tsp garlic cloves, chopped
2 tablespoon fresh ginger, peeled and chopped
1 tbsp green chili, minced
1 baby eggplant, peeled, cut into 1/2" cubes
4 ounces peas
1 tablespoon grated lime zest
2 teaspoon green curry paste (Thai)
14 oz lite coconut milk
1 tbsp. fish sauce
1/2 tsp turmeric
3 green onions, chopped
1/4 cup chopped fresh cilantro
2 tablespoons chopped fresh mint
9 oz. boneless, skinless chicken breast, thinly sliced

Recipe Directions for Spicy Eggplant and Pea Curry with Chicken

Heat ˝ tbsp oil in a large skillet over medium heat. Add the eggplant and sauté until tender, adding small amounts of water or chicken stock to steam. Remove from pan and set aside. Add the remaining oil to the skillet along with the chili, garlic and ginger, sauté 2 minutes, add the green curry paste and continue to cook 1 minute. Slowly incorporate the coconut milk into the mixture. Return the eggplant to the skillet. Add the peas and the chicken and simmer over medium low heat until the chicken is cooked through, about 5 minutes. Add the remaining ingredients and cook 2-3 more minutes and serve.
