Spicy Eggplant and Capsicum Salad Recipe

A spicier version of ratatouille, served cold with Greek yoghurt. Vary spices to taste.

Recipe Ingredients for Spicy Eggplant and Capsicum Salad

2 eggplant, peeled (yield from 1-1/4 lb) Eggplant
500 grams Peppers
1 large Onions
30 grams Garlic
2 tsp Cinnamon, Ground
2 tsp Cumin
2 tsp Paprika
2 tsp Paprika
5 grams Coriander Powder
50 grams Coriander
800 grams Diced Tomatoes
4 tbsp Olive Oil

Recipe Directions for Spicy Eggplant and Capsicum Salad

  1. Cut eggplant into 1 1/2cm cubes. Place in a colander over a sink, sprinkle generously with salt and toss eggplant to coat. Leave for 30 minutes to disgorge bitter juices.

  2. Cut capsicum into similar size pieces.

  3. Preheat the oven to 200C.

  4. Rinse the eggplant well to remove the salt, place in a tea towel and squeeze to remove as much water as possible. Lay out the cubes of eggplant and cut capsicum on a baking tray and drizzle with 2 tablespoons of the oil.

  5. Roast for 25 minutes until the eggplant is soft and starting to brown, and the capsicum is soft.

  6. Meanwhile, heat remaining oil in a pan over medium heat. Add onion and cook for 2-3 minutes until it starts to soften. Add dry spices and cook for a few seconds to release flavours. Add tomato and garlic and cook over low heat for 6-8 minutes until thick. Season with salt and pepper and stir in coriander. Set aside.

  7. Remove eggplant and capsicum from oven, then add to tomato mixture. Stir in mint.

  8. Serve at room temperature with yoghurt or tzatsiki.
