Spicy Eggplant with Beef (served with rice)

Recipe Ingredients for Spicy Eggplant with Beef (served with rice)

2 tsp fresh ginger
2 tsp minced garlic
3 tbsp soy sauce
2 tsp sugar
2 tsp vinegar
1/4 tsp crushed red pepper
1 tsp cornstarch
1 large eggplant
1 large zucchini
200 g ground beef
1/4 cup oil
2 cups cooked brown rice

Recipe Directions for Spicy Eggplant with Beef (served with rice)

Mix together ginger, soy sauce, vinegar, chili, and cornstarch. Set aside. Heat oil in a frying pan until hot. Add eggplant and zucchini and fry in oil until pulp is tender. Place eggplant and zucchini pieces between paper towels and press lightly to remove excess oil. Add ground beef to the pan and cook; then remove beef and pour out oil. Heat the sauce in the pan until near boiling. Add the eggplant and zucchini and ground beef. Mix together until thoroughly heated. add a little water if too dry. Serve over hot rice.
