Spicy Curried Chicken with Couscous

Recipe Ingredients for Spicy Curried Chicken with Couscous

2 chicken breast
2 teaspoons vegetable oil
1/4 teaspoons salt
1/8 tsp ground red pepper
1 tsp vegetable oil
1 cup chopped green apple, unpared
1/2 cup chopped onion
1 garlic clove
2 tsp curry powder
2 tsp grated orange peel
1 cup chicken broth
1/4 cup raisins
1 tbsp cornstarch
1/4 cup cold water
2 cups hot cooked couscous or rice

Recipe Directions for Spicy Curried Chicken with Couscous

  1. Remove excess fat from chicken; cut chicken into 1-inch pieces

  2. Heat 2 tsp oil in 10-inch skillet until hot

  3. Cook and stir chicken, salt and pepper in oil over medium heat until chicken is done, about 5 mins; remove chicken

  4. add 1 tsp oil, the apple, onion, garlic, curry powder and orange peel; cook and stir until apple is tender, about 7 minutes
