Recipe Ingredients for Spicy Cucumber Spears

2 lbs cucumbers
1 tbl salt
2 tbl sesame oil
1 tsp chili pepper flakes
2 tsp fresh ginger, grated
6 cloves garlic, sliced
1/4 cup vinegar (preferrably rice)
3 tbl sugar

Recipe Directions for Spicy Cucumber Spears

  1. Scoop out seeds, peel cucumbers if they have tough or waxed skin, sprinkle with salt and set aside. After 1 hour, rinse and drain and place in bowl with dressing ingredients.

  2. For dressing: heat sesame oil in small pan until hot but not smoking. Add chili pepper flakes and stir for 10 seconds. Remove from heat and cool. Add remaining ingredients. Stir until sugar is dissolved.

  3. Refrigerate cucumbers with dressing at least overnight before serving. Note: this gets hotter with each passing day. It is best within 3 days.
