Somewhat asian tasting spicy soup with a very creamy texture. Also quite filling despite less than 400 calories per serving.

Recipe Ingredients for spicy creamy potato-carrot soup

4 medium potatoes
4 medium carrots
1 cup vegetable broth
1 cup apple cider
1 tsp grated orange rind
1 tsp thyme
1 tbsp honey
80 g chopped celery
1 tbsp olive oil
1 medium onion
3 cloves garlic
100 g sour cream
1 tsp ground ginger
1 tsp curry powder
1 tsp chopped chili
100 g sour cream

Recipe Directions for spicy creamy potato-carrot soup

  1. Fry onions and garlic in olive oil until lightly brown. Add celery, then potatoes and carrots.

  2. Cook with apple cider and vegetable broth until the vegetables are soft.

  3. Blend soup in food processor, put back on the stove, add sour cream, honey and seasoning, cook for another 5 minutes while stirring.

  4. If the spices are too many for your taste, you can leave ginger and curry out. Enjoy.
