Creamy and slightly spicy dish that can be served alone or over whole grain brown rice. Spice measurements are not exact. Spice to your liking! We recommend seasoned grilled asparagus as a side.

Recipe Ingredients for Spicy and Creamy Mushroom Chicken

12 oz Fresh Boneless Skinless Chicken Breasts
2 1/2 serving 98% Fat Free Cream of Mushroom Condensed Soup
1 cup Milk, Nonfat, Fluid
1/2 cup chopped raw Vidalia Onion
1/4 cup, chopped Peppers, Sweet, Red
2 ounce Mushrooms, Portabella
1 cup Spinach
4 clove Garlic
1/4 cup Ricotta, Part Skim Milk Cheese
1 tbsp Garlic Powder
1/2 tsp Black Peppercorns Grinder
2 teaspoons Grill Mates Chicken Rub
1 serving Cayenne Pepper
1/4 tsp Spices Crushed Red Peppers
3 serving Italian Seasoning - Marcum Gourmet Spices
2 tbsp Parsley, Dried
2 tbsp Extra Virgin Olive Oil
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Spicy and Creamy Mushroom Chicken

  1. Mince onion and fresh garlic and chop peppers and mushrooms to your liking. Set aside.

  2. Trim and cut up chicken into small pieces.

  3. Heat olive oil in wok over medium heat. Add chicken, rub, and half of black pepper, garlic powder, and Italian seasoning.

  4. Cook, stirring occasionally, until all chicken has turned white.

  5. Add onions, garlic, mushrooms, and red pepper. Cook for about three minutes.

  6. Stir in spinach.

  7. Add soup, milk (less if you want a thicker broth), ricotta and parmesan cheese, and remainder of spices.

  8. Add additional spices if desired.

  9. Cook over medium heat, stirring occasionally, until heated through.
