Recipe Ingredients for Spicy & Creamy Cauliflower Soup

3 cup Cauliflower
2 stalk, large (11"-12" long) Celery
2 small (5-1/2" long) Carrots
0.5 cup, chopped Onions
1 tbsp Coconut Oil, Unrefined, Organic
0.5 cup Soymilk Unsweetened
0.5 serving Blue Dragon Light Coconut Milk
0.5 tbsp Ginger, Ground
1/4 tsp Cayenne
3 cup Organic Vegetable Broth
0.5 tablespoon Oregano
2 tbsp Parmesan, Grated Cheese

Recipe Directions for Spicy & Creamy Cauliflower Soup

  1. Saute celery, carrots and onion until soft.

  2. Add cauliflower and cook for about 5 minutes.

  3. Add liquid and spices and simmer until cauliflower is soft.

  4. Let cool, then puree in batches until smooth.

  5. I served it with sauted mushrooms, bread crumbs, and a swirl of yogurt.
