corn dish that has a bit of a bite to it. Fresh corn tastes better, but canned will do. Adapted from a recipe in Cooking Light, August 2010 p 127.

Recipe Ingredients for spicy corn dish

2 tablespoons butter
1/2 cup finely chopped onion
1/4 cup finely chopped red, orange and yellow bell pepper
1/2 tablespoon finely chopped jalepeno pepper
2 cloves garlic, finely minced
2 cups corn kernels
1 teaspoon paprika
3/4 cup diced tomatoes
2 teaspoons chopped fresh basil

Recipe Directions for spicy corn dish

melt butter in saucepan add onion, celery, garlic, jalapeno and peppers to pan. Reduce heat, and cook till tender approx 5 minutes. add corn and paprika, cook 5 minutes stirring occasionally. add tomatoes, cook approximately 10 more minutes, stirring occasionally. remove from heat, stir in basil, 1/4 teaspoon kosher salt and 1/4 teaspoon of black pepper. You can use red pepper in place of black pepper if you prefer more heat.
