This makes an easy (and tasty) side dish for grilled almost any grilled meat. You can adjust the heat by using only half the jalapeno or not completely seeding it. I like it with a touch of low-fat sour cream to help cut the heat a bit.

Recipe Ingredients for Spicy Corn and Beans

1 onion, chopped
1 jalapeno pepper, chopped & seeded
1 green pepper, chopped & seeded
1 garlic clove, chopped
2 tbsp olive oil
16 oz frozen corn
29 oz of light kidney beans, rinsed
14 1/2 oz diced tomatoes, with juice
2 tsp chili powder
3/4 tsp salt
1/2 tsp cumin
1/2 tsp black pepper

Recipe Directions for Spicy Corn and Beans

  1. Drizzle olive oil into a cold frying pan and then heat. Add onion, jalapeno and garlic. Saute until soft. Pour into crock pot.

  2. Add green pepper, corn, beans, tomatoes, chili powder, salt, cumin and black pepper. Mix well. Set crock pot to low for 8 hours.

  3. Serve with a dollop of low-fat sour cream.
