Recipe Ingredients for Spicy Coconut-Curry Chicken

1 tbsp Coconut Oil, Unrefined, Organic
16 oz Chicken
100 grams Onions
150 grams Peppers, Sweet, Green
150 grams Carrots, Baby
100 grams Mushrooms
2 tsp Garlic, minced
2 tsp Ginger, Ground
1 tbsp (more if desired) Curry Powder
14 oz Tomatoes Diced
16 oz Half and half
8 oz Coconut Juice (Chaokoh)
1/2 cup Coconut Flakes

Recipe Directions for Spicy Coconut-Curry Chicken

  1. Heat oil. Brown chicken pieces and remove to paper towel.

  2. Add onions. Cook til fragrant, about 3 minutes.

  3. Add garlic, ginger, curry, and 1/4 tsp of salt. Cook for 30 seconds til fragrant, then add tomatoes and milks. Stir well and bring to a boil.

  4. Add chicken and veggies. Simmer until heated thru.
