Low fat and low carb -- sweet potato thickens the broth

Recipe Ingredients for Spicy Clam Chowder

6 c broth
1 1/2 c sweet potato, mashed
1 c 1% milk
1/4 c parsley, chopped
1 c corn
20 oz baby clams
6 1/2 oz minced clams
1 tsp salt
1/2 tsp pepper, freshly ground
3 tbsp hot sauce

Recipe Directions for Spicy Clam Chowder

  1. Heat the broth, either seafood or chicken. If necessary, cook it down to concentrate the flavor.

  2. Bake or nuke the potatoes. Peel and puree.

  3. Blend hot broth and potatoes in blender. Return mixture to pot.

  4. Add corn, parsley, milk, salt and pepper. Heat through.

  5. Add clams and cook for only a minute or so to heat through. Don't overcook the clams.

  6. Remove from heat, add hot sauce and taste for salt. Adjust as needed.

  7. Serve immediately with more hot sauce on the table for those who like it hot.
