Chickpeas and raw vegetables are pureed with garlic and spices for a low fat , low glycemic load sandwich spread.

Recipe Ingredients for Spicy Chickpea and Vegetable Spread

3 cups chickpeas, cooked and drained
2 cups spinach, raw shredded fine
1 red pepper, diced fine
1/2 cup broccoli, raw, chopped fine
1 tbsp tahini
1 tbsp olive oil
1 tbsp ginger root, grated
2 tbsp garlic, crushed
2 tsp cumin
2 tsp cayenne pepper
1/4 cup lemon juice
1 tbsp parsley, chopped
1/2 tsp salt
1 tbsp coconut, shredded
1 tbsp raisins, sultanas, or dried cranberries
1 tsp pumpkin seeds
1 tsp sesame seeds
1 tsp sesame oil
1 tsp flax seeds
2 tsp lemon peel

Recipe Directions for Spicy Chickpea and Vegetable Spread

Puree all ingredients except the seeds, raisins, coconut, and sesame oil. Puree into a thick paste, adjust seasonings to taste. Add more lemon juice if a smoother paste is desired. Sprinkle with seeds, coconut, and raisins, and drizzle with sesame oil before serving. To serve, spread paste thickly in a whole grain pita and stuff with vegetables, or eat on a bed of lettuce with ripe avocado wedges.
