Spicy Chickpea and Tomato Soup with Brown Rice

Recipe Ingredients for Spicy Chickpea and Tomato Soup with Brown Rice

2 tbls olive oil
2 stalks celery (finely diced)
2 carrots (finely diced)
1 large onion (finely diced)
3 cloves garlic (minced)
2 chipotle peppers (minced)
20 cups low sodium chicken stock (homemade if possible)
1 lb dried chickpeas (garbanzo beans) (soaked overnight)
2 large tomatoes (diced)
28 oz Tomatoes (pureed)
1 cup uncooked brown rice
2 tsp kosher salt
4 tbls cornstarch

Recipe Directions for Spicy Chickpea and Tomato Soup with Brown Rice

  1. Soak the chickpeas overnight in enough water to cover by a couple of inches, then drain and rinse.

  2. Sweat mire poix (diced onion, carrot, celery and garlic) in olive oil until softened and very aromatic.

  3. Add minced chipotle peppers (preferably canned in adobo sauce).

  4. Add chicken stock and chickpeas.

  5. Add any other herbs and spices (black pepper, smoked paprika, chili powder, cumin, turmeric, mixed herbs) to taste, but don't add salt at this stage (as this will toughen the chickpeas).

  6. Bring to a boil and reduce to a simmer for an hour or so.

  7. Remove a couple of cups of the chickpeas and puree until smooth and add back into the soup as a thickener (or use a stick blender to puree some of the soup but be sure to leave lots of whole chickpeas).

  8. Add diced tomatoes and pureed canned tomatoes and the brown rice.

  9. Add salt and pepper to taste.

  10. Simmer for another 45-60 minutes to cook the rice.

  11. Mix cornstarch with a little cold water to form a slurry and mix into the soup to thicken it if needed.
