Recipe Ingredients for Spicy Chickpea salad

242 g (1 can, drained, rinsed) garbanzo beans
94 g sweet red, green, yellow peppers, chopped
158 g pitted black olives, drained
1 medium red onion, sliced
3 tbsp lime juice
2 tbsp olive oil
2 tbsp cilantro

Recipe Directions for Spicy Chickpea salad

  1. In a large bowl, toss together the beans, peppers, olives, and onion.

  2. Mix together the lime juice, olive oil, and cilantro. Add salt and pepper to taste.

  3. Serve vinaigrette with salad in individual portions on a leaf of Boston lettuce.
